Tempeh Ramen Bowl with Veggies

This is a great recipe if you're new to tempeh. I promise you won't regret trying this one. It's easy, quick, delicious, and filling! Oh, and it's totally oil and sugar-free.

Ingredients:
1 pack of ramen noodles. I used this brand! (I cook all 4 bricks)
1 cup of frozen sweet potato cubes
1 cup of frozen broccoli
1 pack of tempeh
2-4 tbsp of tamari sauce
1 green onion
Dressing:
1/4 cup of tahini dressing. You can use a store-bought dressing, or make your own oil-free using this recipe!

How to:
Cut the tempeh into strips about 1-inch thick.
Put your strips in a pan (any pan, really) with boiling water and 2-4 tbsp of tamari sauce. Let the tempeh boil until they're soft, you can drain them after about 10-15 minutes. Feel free to season these! Use anything you'd like, I like to use onion powder, garlic powder, and basil.
Cook the ramen noodles according to package instructions. I prefer to drain the water entirely because this is not a soup.
Microwave your veggies until soft (I love using frozen pre-chopped vegetables. It makes life so much easier and my prep time a lot faster. You're welcome to make these fresh as well.)
Add your cooked ramen noodles to a bowl. Add a few pieces of tempeh. Add your veggies, and top if off with your tahini sauce and some chopped green onion!
